Happy St. Patrick’s Day!
For those with a nip o’ Irish blood, this past Monday was a reason to celebrate.
Looking for a healthy, sustainable green meal? Here is a recipe I created (with some help from help from my colleagues at work, and Google of course*.
1-2 ripe avocados from the discount-produce shelf **
1-2 boiled local free-range eggs
1-2 tablespoons plain organic yoghurt
1-2 tablespoons diced organic celery
1-2 tablespoons diced green pepper from the discount shelf
1/2 teaspoon dried chillies
sprinkling black pepper
1 Greek pita
1) In a medium sized bowl, use a spatula to cream the avocado with the yoghurt, green pepper and celery.
2) Chop boiled egg into 1” pieces and mix with avocado.
3) Spice to taste.
4) Spread on pita and enjoy!
Makes 4-6 servings of yummyness:-)

**Normally I don’t’ buy produce from exotic places. Lately I’ve discovered the “discount-shelf” – produce that is very ripe sold half price, that would otherwise be thrown away. This has added a little variety to our taste-buds. And why let all those CO2 emissions be emitted in vain?
